Maqui & Quadruple Berry Overnight Chia Parfait

If you're looking for an antioxidant fix you've come to the right place. This one packs a serious antioxidant punch and is flavoursome to boost. The hero of this breakfast dish is most definitely Loving Earth's Maqui Berry Powder which is the highest antioxidant fruit on the planet . It is known to stimulate weight loss, aid in detoxification and delay the aging process - SOLD?! Having said that - it isn't a cheap addition to your pantry (I use it on the odd occasion only as a 'treat') - the parfait will still taste wonderful without it, I promise. Perhaps just up your quantity of berries.
>This recipe makes two serves and with chia parfaits making extra it's seriously the way to go. They last in for fridge for 4-5 days so make it easy for yourself and up the quantities. Ideally try and make this the night before, giving the chia seeds time to spin their magic and thicken the dish up. You could however certainly make it 15-30 minutes before serving and it would still be beautifully thick. Personally I need a decent amount of protein in the majority of my meals so this one includes a scoop of an organic vanilla rice protein powder (typically my one exception to 'whole food' eating - because I don't eat fish and soy products it is difficult to get high quality protein into my diet without the occasional scoop of protein powder).
1 headed dessert spoon maqui berry powder
1/3 cup mixed berries (I used, raspberries, blueberries and a strawberry!)
1 heaped dessert spoon goji berries
1/4 cup chia seeds
1 heaped tspn maca powder (optional, but it's sooo good!)
2 tblspns natural, full fat yoghurt
1/3 cup coconut milk + 1 tblspn for serving
1 scoop organic protein powder (optional)
1 cup water or almond milk (or milk of choice)
Stevia to taste
1 tblspn cashew cream (optional)
Crunchy options for the purpose of layering and decorating!
Now for the really technical instructions: throw all of the above into your Thermomix or blender and blend like mad until smooth! I like mine really smooth so I left it for a good minute in the Thermomix. Pour it into a container of some sort and pop into the fridge. At breakfast time I simply scooped a big spoon of the mixture into a glass and plopped a tablespoon of coconut cream on top. This was followed by another spoon of parfait and some Loving Earth Activated Caramelised Buckinis (you could just use granola, or chopped nuts etc), another spoon of parfait and then for the true decadence, some cashew cream drizzled on top, with some extra goji's and nuts.
I challenge you not to go back for seconds!
