The Seriously Simple Smoked Salmon Salad Roll

I have just been glancing over the recipes on my blog and realised how breakfast and smoothie heavy they are - you needn't ask which is my favourite meal of the day because there will be no prizes ;-) Folks I am sorry! I hereby commit to creating a little more recipe balance on my blog, stat.

I'm not sure any of you really need the recipe for this lunch time delight (given it's a little obvious) but I think it's a good idea to have it listed on the blog as a source of inspiration in case you're running out of ideas. At least you'll have a go-to blog for easy suggestions. So let's go (don't blink or you'll miss it).

I guess it really depends on your appetite as to how many of these little rolls you might need. I typically buy a 100g smoked salmon packet and use half in a lunch, with salad. But you know your appetite a little better than I. Throw in any of your favourite salad ingredients. This is a typical combo of mine and makes one roll.

You'll need:
2 or 3 slices of salmon carefully laid out
1/4 avocado, sliced
2 or 3 slices red capsicum
2 or 3 slices cucumber
2 or 3 thin slices spring onion, cut length ways
A handful of baby spinach or rocket, optional
A handful of herbs, optional
A drizzle of lemon juice

Lay out your salmon pieces so that it is still overlapping. Line the salad ingredients along one end. Gently roll it up and drizzle with lemon juice. You'll definitely need a knife and fork for this little number.
