Banana and Crunchy Peanut Butter Ice-cream

It occurred to me this morning that I am yet to post a dessert recipe on this blog - sacrilege! Particularly given I very well acquainted with sugar free, guilt free treats (as you may well have noticed through my breakfast smoothies and parfaits). Anyway. Many foodie instagrammers would by now have noticed a fair bit of hype around sugar free ice-creams over summer (not an unusual occurrence mind you) and this recipe has been given a pretty good run for it's money. I should preface this post by saying this is not a 100% sugar free treat. Bananas are very high in natural sugars so are a very rare treat for me (I had not eaten them for 2 years of my recovery). Be intuitive and do what is right for your body.

So the first time I tried this I seriously couldn't believe there was no dairy in my bowl - it looks like soft serve and melts like one, absolute creamy deliciousness! I am now in the process of designing a similar recipe for my cook book - it is so much fun getting creative with this I assure you.

I have made this in a not-so-powerful, oldish blender and also in a thermomix. I will be honest and say that the not-so-powerful blender does take some patience but stick with it because I promise you will get there and it will be amazing! It does keep in the freezer okay but I've noticed it doesn't keep it's lovely creamy colour. Personally I think it's best to make just enough for the moment. The ice-cream is quite rich so you really don't need much. I find two large bananas makes about three serves but each to their own!

You'll need:
2 frozen bananas, chopped
2 heaped tablespoons of organic, 100% natural crunchy peanut butter (personally I think the texture of the crunch makes all the difference).

Throw all TWO (!) ingredients into your blender and blend until smooth and creamy. That simple. If you do you not have a high powered blender you may need to stop and start many times to push the banana back down onto the blades. I think I had to do this about 8 times with the old blender - I didn't think I would ever get there! In the Thermomix it took less than a minute. The photo below is of my recent banana ice-cream creation topped with some home made gluten free crushed lemon and poppy seed biscuits - a taste sensation I promise you!

You can play around with this recipe as much as you like - get creative! Always peel your bananas before freezing them! I cut mine up and throw them in a zip lock bag. Non organic peanuts and peanut butters are full of nasty pesticides I really do suggest if you are a PB fan you grab your own organic peanuts and make your own or go to the health section of your supermarket to find great organic options.
