It’s a balmy southern hemisphere Christmas morning, the family is over for brunch, sitting around the pool, swimmers on (work with me here). Hot drinks are simply out of the question, though infusing your Christmas with festive spices is not! Why not impress them all by whipping up a jug of this chilled fizzy tea?

Makes 2*

You will need:
1 1/2 cups water, boiled
1/2 cup pear juice
2 teaspoons raw honey
1 earl grey tea bag or 1 tablespoon loose leaf tea
1 cinnamon stick
Sparkling water to top
Orange wedges to serve
Ice to serve

Place the tea bag in a small pouring jug and cover with boiling water. Stir in the honey and add the cinnamon stick. Allow the tea to steep at room temperature until completely cool, approximately 30 minutes. Remove the cinnamon stick and discard. Fill two tall glasses with ice cubes and divide the cold tea and the pear juice between the two glasses. Top with sparkling water and stir gently. Garnish with an orange wedge and serve with a straw. Drink immediately.

*Double or even quadruple the recipe to make a larger bowl of punch.
