Cherry Coconut Loaf

Sweet Cherry Coconut Loaf for breakfast? Why on earth not?

This loaf is gluten free, dairy free and vegan and packed with the goodness of pepitas, apple and plump sweet cherries. I recommend slicing it up and toasting it with coconut oil on top (yuuuum).

Pro tip: bake two loaves, freeze one and slice it up for the afternoons when you need a little sweet something with your afternoon cuppa. Eat the other one warm, of course.

 

GF/ DF/ VEGAN
(Makes 10 slices)

Ingredients:

1 cup GF self-raising flour
1 cup almond milk
3 tsp coconut sugar
1 tsp pure vanilla extract
1 cup pepitas
1 large apple, grated
¼ cup coconut (desiccated)
½ cup cherries (frozen or fresh, chopped)

Method:

Oven to 180*.

Line a 13cm x 23cm loaf tin with baking paper.

In a bowl mix all ingredients together (apart from the cherries). Mix well. Gently fold the cherries into the mix. Pour batter into tin and bake for 40 mins until golden brown on top.

Allow to cool a little before slicing. Enjoy warm or cold.
