Easy summer salads are where it's at - for last minute guest arrivals, following days at the beach or after the end of a long working day. Simple, yet delicious salads, that don't require 37 ingredients but satiate on many levels. Which of course, is where haloumi comes in. Throw haloumi on a plate and most taste buds stand to immediate attention.

This salad is the perfect addition to a piece of grilled fish. In fact, if you've not yet paired strawberries and fish you may like to try this recipe, Crispy Skinned Salmon with Strawberry, Pistachio and Basil Salsa. There's something about the fresh, juiciness of strawberries that goes perfectly with rich salmon.

Serves 4

120g baby spinach leaves
250g haloumi, sliced
250g punnet strawberries
1/2 cup almonds (chopped and lightly toasted)
Handful fresh mint

Dressing
1/3 cup olive oil
1tbs lemon juice
Salt & Pepper

In a hot pan, grill haloumi on both sides until golden brown (remove from heat and put to the side).

In a large bowl, combine spinach, strawberries, almonds and mint.

Mix together salad dressing ingredients and toss through the salad. Divide onto four plates and pop the haloumi and more fresh mint on top. Give each plate a good sprinkle of black pepper.
