Sesame orange squares

Who would have thought that orange and peanuts could become such good friends!

Let me tell you, these super simple Sesame Orange Squares just work. Zesty and sweet with all the goodness of seeds, nuts, coconut oil and oranges, they are perfect for stashing in the freezer for those 3pm slumps. And even better news, they are NO BAKE. Yep - BINGO.

2 cups peanuts (roasted but not salted)
1 cup sesame seeds (plus more for sprinkling on top)
2 cups desiccated coconut
1/2 cup sultanas
1 orange - juice and zest
¾ cup almond butter
1/4 cup coconut oil (hard)
1/2 cup honey

Line a tray with baking paper. (I used a 25cm long, 20cm wide and 5cm deep).

Blitz the peanuts in a blender until they are broken up a little. In a large bowl mix the peanuts with sesame seeds, coconut, orange zest and juice and sultanas.

In a small saucepan gently heat the almond butter with the coconut oil and honey until melted and combined well (not boiling!). Pour the wet ingredients into the bowl and mix well.

Pour the mixture into the tray and press down with your hands, making sure the top is even. Sprinkle on extra sesame seeds. Pop into the fridge for 3 hours or overnight.

When the slice is set, use a large sharp knife to chop into squares and devour!
