Strawberry & Maqui Berry Superfood Smoothie
By Amy Crawford
This was Saturday's breakfast and an oh so delicious start to my day. I really do like to turn my smoothies into proper meals (as will be evidenced by the ingredients list) and it really is a case of what I DIDN'T throw into this mix. There are however many optional ingredients for those of you who like life a little simpler.
My body needs good quality protein with every meal and pure whey protein is one non wholefood that I make an allowance for to give me a little variation in my day. Fish is unfortunately no longer a part of my diet (unless wild from Alaska) and as often as I've tried I can't survive effectively on a vegetarian diet. That leaves me with eggs, meat and whey protein (and seriously I wish things were different!). Enough about that. I'm sure you'd really just like the recipe.
3 large strawberries
1 dessert spoon maqui berry powder (optional)
1/3 banana (a real treat for me so I go easy, throw in as much as you are comfortable with)
1 heaped teaspoon goji berries (optional)
1 dessert spoon coconut oil (optional)
125 ml almond milk (or your choice of milk)
2 heaped tablespoons full fat, natural yoghurt
1 tablespoon ground flaxseed
1 scoop whey protein powder (optional)
1/2 teaspoon vanilla powder (or a couple of drops vanilla essence)
1 tablespoon chia seeds (thickens it up beautifully if you let it sit for a while)
Throw all the ingredients into your thermomix or blender and hit play until smooth! (I like mine really smooth and creamy so I leave mine in for a good minute but 30 secs would do). Top with chopped nuts, coconut, more goji's - go nuts! In this photo mine is topped with a beautiful freeze dried strawberry, coconut, goji and chia mix from The Staple Store in Ripponlea.
