Lemon & Lime Green Gummies

Gummies are such a lovely way to support our health, whilst also satisfying a mid morning or afternoon sweet tooth. They are ridiculously easy to make, and I'm guessing all family members will enjoy them, as long as you get the sweetness right. 

Gelatin as you likely know, comes from heated collagen. The chemical composition of gelatin is such that it gels when it cools. The result resembles a jube, in texture and often, in flavour. Gelatin/collagen are a wonderful support for gut health, skin, hair, nails, joints, bones, connective tissue.. you name it. 

To up the nutritional profile of the gummies even more, I've added a few teaspoons of my lemon and lime flavoured Daily Greens blend. You can read all about the benefits of Daily Greens here.

If you're a parent hoping to get more greens into your little people, this could be a great way to start.

Lemon & lime green gummies

1  1/2 cups water
3 tablespoons gelatin
4 heaped teaspoons Daily Greens
Juice of 1 large lemon, or 2 small
3 heaped teaspoons raw honey*, or Manuka (or sweetener of choice)

* The sweetness is deceiving when still warm. When it forms a gel it will become less sweet to taste. If you have a sweet tooth don't hesitate to add more honey.

In a small bowl, mix the gelatin and water together with a spoon and leave it to bloom (absorb water), for 5-10 minutes. 

In a small saucepan over low heat, combine the bloomed gelatin, Daily Greens powder, lemon juice and honey. Allow to heat gently, stirring all ingredients until well combined and the gelatin has fully dissolved.

Pour into a silicone ice cube tray, a lined plastic lunchbox base or a lined square cake tin and pop in the fridge for 1-2 hours to set. Slice the gummies into small blocks.

Gummies will keep up to 1 week in the fridge.
